Pizzelle are traditional Italian cookies known for their distinctive look and delightful flavor. Often enjoyed as a festive treat, pizzelle are beloved for their delicate taste and are a staple at many Italian celebrations.

Ingredients for Classic Italian Pizzelle

To create your own classic Italian pizzelle, gather the following ingredients:

  • 12 eggs

  • 1 cup oil (olive oil or fractionated coconut oil are great choices)

  • 1 cup butter, melted

  • 2-3 teaspoons anise oil (adjust according to your taste preference)

  • 2 ½ cups granulated sugar

  • 5-6 cups all-purpose flour

If anise isn’t your flavor of choice, feel free to substitute with 2 teaspoons of vanilla or orange oil for a different yet equally delightful taste.

Directions to Prepare Pizzelle

Making classic Italian pizzelle is a straightforward process that begins with a large mixing bowl. Begin by combining all the wet ingredients, excluding the flavoring oils. Next, add the dry ingredients into the bowl and mix thoroughly. This step requires a sturdy spoon to ensure that the sugar and flour are properly blended. Once the dry ingredients are combined, you can then incorporate your chosen flavoring oil into the mixture.

The dough should be thick yet pliable, perfect for pressing onto a pizzelle maker. Preheat your pizzelle iron according to the manufacturer's instructions and brush both sides of the iron with some oil. Use a spoon to drop a small amount of dough onto the center of each mold. Close the iron and cook for about 30-60 seconds, depending on your desired level of crispness.

Once cooked, carefully remove the pizzelle and allow them to cool completely on a wire rack.

Cooking Tips:

  • Be careful! I have yet to use a pizzelle iron that doesn't get hot on the outside as well as the inside. The last time I made them I melted the handle on my toaster because the top of the iron got too close.

  • Each pizzelle iron is different and will take slightly different cooking times. You will have to determine how dark or light brown you like your pizzelles. This means you get to sample cookies to find out which level of done-ness you prefer, but wait until they cool slightly first.

  • Extra pizzelles also makes excellent ice cream sandwich cookies. I have not frozen the cookie sandwiches, but eat them freshly made with a slice of ice cream between two cookies. Tastes like eating a waffle cone, but better!
