¼ cup + 2 tablespoons lemon juice
4 teaspoons minced garlic
½ teaspoon salt
¼ teaspoon pepper
2 tablespoons olive oil
½ cup coconut milk
1 cup water
½ cup Parmesan cheese
2 teaspoons arrowroot flour
Preparing the Lemon Chicken and Artichokes with Zoodles
In a large skillet cook the chicken with the olive oil, parsley, and garlic salt. Cook until the chicken is fully cooked and colored nicely, then drain off the excess juice. Add the artichokes to the chicken and keep on low heat until fully heated.
Sauce Directions:
In a pan place all of the sauce ingredients and put over low heat. Cook while stirring constantly until the sauce is thick and hot. If the sauce is thicker than you like simply add coconut milk 1 Tbsp. at a time until it reaches the desired consistency. Once cooked keep on simmer until ready to use.
Zoodles:
In a skillet pour 2 Tbsp. Of olive oil. Using a veggie noodle maker cut the zucchini into noodles. You can also just cut the zucchini into circles and cut each circle in half and cook it that way if you do not have a slicer. Put the zucchini into the pan and saute it until just soft.
To plate it elegantly place some of your zoodles on a plate and lay a piece of chicken on top of them. Pour a generous amount of the sauce over all of it and garnish with Parmesan cheese and parsley.
